Kugelhopf!!!

Welcome to the hmnmn week of the great bloggers bake off (with me joining in sporadically I’ve forgotten where we are).

European cake week! Yay I thought. I have recipes I can use from my German mother. So I searched through her recipes and planned it all then at the last minute changed my mind, after all it is a ladys perogative.

I decided on a kugelhopf recipe then decided not to add the dried fruit or the almonds and fill it with creme patissiere instead. So not much of a traditional kugelhopf at all more like a giant custard doughnut but it was yummity anyway.

Vanilla kugelhopf

I made the creme patissiere from here. It is easy to make and freezes well.

300g plain flour
100g softened butter
1 packet of dry quick yeast
1 tsp vanilla extract
pinch of salt

Put all pastry ingredients in a bowl and mix well.

Knead until the dough is smooth and elastic, approx 15 minutes.

Place the dough in a bowl and cover with cling film

Leave dough in a warm place and let rise until it doubles its size (approx 3-4 hours). Alternatively, let it rise overnight in your fridge

Roll out the dough on to a lightly floured surface into a rectangle. It should be about half a cm thick

Spread the creme patissiere on to the rolled dough

Start rolling it into a roll. Pinch the dough gently while you roll, to avoid air pockets in your pastry

Pop it in the prepared tin, cover and let rise for another 2 hours.

Preheat oven to 180c

Bake for approximately 40 minutes.

Cool for 10 minutes in the tin then turn out onto a cooling rack. When cool cover in icing sugar.
