Bake off is back!!!
My mum was a brilliant baker and we always seemed to come home from school to freshly baked cakes or biscuits. In fact I don’t remember her buying anything like that when I was little at all. I’ll probably be using a few of her recipes throughout the bake off challenges.
My sister came round to help me to bake my biscuits this week. So I thought I’d go for something she hadn’t tried to make before. Viennese biscuits. Lovely crumbly buttery bites of deliciousness.
I’ve made these a few times before but not many using this recipe. (I have a confession to make….the best bit of making these biscuits for me is the piping.)
So we made these and then we had to wait for them to set in the fridge before they could be baked so we whipped up a quick batch of chocolate chip cookies too.
I don’t really get to spend much time with my sister even though she lives well within walking distance from my house. I enjoyed it and I’ve realised that I miss her and I need to make some time for my family.

225g self raising flour
225g salted butter, softened
75g icing sugar
• Preheat the oven to gas 4/160° fan
• Cream the butter and sugar in a warmed bowl until very soft (or you won’t be able to pipe it)
• Fold in the flour
• Put the mixture into a piping bag with a large star nozzle and either pipe fingers or rounds (I like rounds) onto a tray
• Pop the trays into the fridge for 30 minutes
• Bake for 15 minutes
• Cool on a wire rack
These can be coated in chocolate or flavoured but they don’t normally last long in our house so I don’t normally bother with that.
